Ingredients
Scale
- 1 lb (450g) chuck roast or beef sirloin
- 1 French baguette, sliced into ½-inch pieces
- 1 cup (240ml) beef broth
- ½ cup (120ml) dry red wine (optional)
- 4 cloves garlic, minced (divided)
- 1 tbsp (15g) Italian seasoning
- 1 tsp (5g) red pepper flakes
- 2 tbsp (30ml) olive oil (divided)
- 8 slices provolone cheese, cut into small squares
- ½ cup (120g) hot or mild giardiniera, drained and chopped
- ¼ cup (15g) fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Slow-cook beef: Season beef with salt, pepper, and Italian seasoning. In a slow cooker, combine beef, broth, wine (if using), half the garlic, and red pepper flakes. Cook on low for 6-8 hours until fork-tender. Shred with two forks.
- Toast crostini: Preheat oven to 375°F (190°C). Brush baguette slices with 1 tbsp olive oil and remaining garlic. Bake for 8-10 minutes until golden and crisp.
- Assemble: Top each crostini with shredded beef, a square of provolone, and a pinch of giardiniera. Broil for 2-3 minutes until cheese melts.
- Garnish: Sprinkle with parsley and drizzle with remaining olive oil. Serve warm.
Notes
- Shortcut: Use store-bought rotisserie beef or deli roast beef in a pinch.
- Make ahead: Beef can be cooked and shredded 1-2 days in advance.
- Vegetarian twist: Substitute beef with sautéed mushrooms and omit cheese for vegan.
- Serving tip: Offer extra giardiniera on the side for heat lovers.
