Description
A sweet and spicy Southern-inspired sandwich featuring crispy chicken, creamy pimento cheese, and a honey-pepper glaze on a toasted brioche bun for the perfect balance of flavors and textures.
Ingredients
4 pieces Chicken Breasts
2 tablespoons Cajun Seasoning
1 cup Pimento Cheese
1/2 cup Mayonnaise
2 tablespoons Honey
1 teaspoon Chipotle Peppers in Adobo Sauce
8 slices of Sourdough Bread
2 tablespoons Butter
Instructions
- Pound chicken breasts to even 1/2-inch thickness. Marinate in buttermilk 1-4 hours.
- Make pimento cheese: Mix all ingredients until well combined. Refrigerate.
- Make glaze: Whisk honey, hot sauce, pepper and vinegar. Set aside.
- Drain chicken. Mix flour and seasonings in shallow dish. Dredge chicken.
- Fry in 350°F (175°C) oil 4-5 minutes per side until golden and 165°F (74°C) internal temp. Drain on rack.
- Brush chicken with honey glaze. Spread pimento cheese on bun bottoms.
- Assemble sandwiches: Bun bottom, chicken, bun top. Serve with extra glaze.
Notes
- For spicier version, add jalapeños to pimento cheese
- Can bake chicken at 400°F (200°C) for 20 mins instead of frying
- Glaze can be made 1 week ahead – warm slightly before using
- Add crispy bacon for extra smokiness
