Ingredients

- 3 cups unsweetened finely shredded coconut
- 1/4 cup maple syrup or honey
- 3 tbsp melted coconut oil
- 1 tsp vanilla extract (optional)
- Pinch of sea salt
- 1 cup chocolate bars, chopped
- 2 tsp coconut oil
- Raw almonds (approximately 24)
Instructions
- In a food processor, combine coconut, melted coconut oil, vanilla extract, sea salt, and maple syrup. Process for about 40 seconds until sticky.
- Divide the mixture among a mini muffin pan, pressing it tightly into each cavity.
- In a bowl, combine chocolate bars and coconut oil. Microwave in 30-second increments until melted.
- Spoon melted chocolate over the coconut base in each cup, placing an almond in the center of each.
- Freeze for 3-4 hours until set.
- Remove from the pan and store in an airtight container in the freezer.
