Ingredients

Scale
  • 3 cups unsweetened finely shredded coconut
  • 1/4 cup maple syrup or honey
  • 3 tbsp melted coconut oil
  • 1 tsp vanilla extract (optional)
  • Pinch of sea salt
  • 1 cup chocolate bars, chopped
  • 2 tsp coconut oil
  • Raw almonds (approximately 24)

Instructions

  1. In a food processor, combine coconut, melted coconut oil, vanilla extract, sea salt, and maple syrup. Process for about 40 seconds until sticky.
  2. Divide the mixture among a mini muffin pan, pressing it tightly into each cavity.
  3. In a bowl, combine chocolate bars and coconut oil. Microwave in 30-second increments until melted.
  4. Spoon melted chocolate over the coconut base in each cup, placing an almond in the center of each.
  5. Freeze for 3-4 hours until set.
  6. Remove from the pan and store in an airtight container in the freezer.

Notes
