Description

Juicy, flavorful ground beef kebabs seasoned with Middle Eastern spices and grilled to perfection. These skewered delights are perfect for cookouts or as a protein-packed main dish served with rice, salads, or flatbreads.

  • 1.5 lbs (680g) ground beef (85% lean)
  • 1 medium onion, finely grated
  • 4 garlic cloves, minced
  • 1/2 cup fresh parsley, finely chopped
  • 1/4 cup fresh mint, finely chopped
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp smoked paprika
  • 1 tsp ground allspice
  • 1/2 tsp ground cinnamon
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 8 wooden or metal skewers (soaked if wooden)

Instructions

  1. Prepare skewers: Soak wooden skewers in water for 30 minutes to prevent burning.
  2. Mix ingredients: In a large bowl, combine ground beef, grated onion, garlic, parsley, mint, cumin, coriander, paprika, allspice, cinnamon, salt, and pepper. Mix thoroughly with hands.
  3. Shape kebabs: Divide mixture into 8 equal portions. Mold each portion around skewers into 6-inch long cylinders (about 1-inch thick).
  4. Chill: Place on a tray, cover, and refrigerate for at least 1 hour (up to 4 hours) to firm up.
  5. Grill: Preheat grill to medium-high (400°F/200°C). Brush kebabs with olive oil. Grill for 3-4 minutes per side (total 8-10 minutes) until nicely charred and internal temperature reaches 160°F (71°C).
  6. Rest & serve: Let rest 5 minutes before serving with tahini sauce, grilled vegetables, and warm pita bread.

Notes

  • For extra moisture, add 1 tbsp of yogurt or 1/4 cup grated zucchini to the mixture.
  • Can be cooked under the broiler or on a grill pan if outdoor grilling isn’t possible.
  • For authentic texture, hand-chopped beef works better than pre-ground.
  • Leftovers make excellent sandwich fillings or salad toppings.
