Description
Juicy, garlic butter steak bites served over creamy parmesan pasta shells for a restaurant-quality meal that’s ready in just 30 minutes!
Ingredients
- 1 lb sirloin steak, cut into bite-sized pieces (Opt for high-quality grass-fed beef for enhanced flavor)
- 4 cloves garlic, minced (Fresh garlic makes all the difference!)
- 12 oz medium pasta shells or any short pasta (Feel free to substitute with gluten-free pasta if needed)
- 3/4 cup grated Parmesan cheese (Use Parmigiano-Reggiano for a richer taste, or try Pecorino Romano for a different twist)
- 2 tablespoons butter (Use unsalted butter for better control over seasoning)
- Salt and pepper to taste (Always season to your preference)
- Chopped parsley for garnish (Optional, but it adds a lovely pop of color)
Instructions
- Cook pasta al dente according to package directions. Reserve 1/2 cup pasta water before draining.
- Make sauce: Melt butter in saucepan over medium heat. Add garlic and cook 30 seconds until fragrant. Stir in cream and simmer 5 minutes. Gradually whisk in Parmesan until smooth. Season with nutmeg, salt and pepper. Toss with cooked pasta, adding reserved water as needed.
- Cook steak: Pat steak dry and season with salt, pepper and paprika. Heat oil in large skillet over high heat. Sear steak in batches 2-3 minutes per side until browned. Reduce heat to medium, add butter and garlic. Baste steaks with melted butter 1 minute. Remove from heat and stir in parsley.
- Serve steak bites over parmesan shells, drizzled with pan juices.
Notes
- For extra richness, stir 1 tbsp cream cheese into sauce
- Substitute half-and-half for lighter version (sauce will be thinner)
- Add 1/4 tsp red pepper flakes for spicy kick
- Leftovers reheat well with splash of milk
