  • 1 tbsp balsamic vinegar
  • 2 tsp dried oregano

  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1 tsp smoked paprika
  • 1 tbsp brown sugar (optional)
  • Salt and black pepper to taste
  • 1/4 cup fresh basil, chopped (for garnish)
  • 1/4 cup grated Parmesan cheese (optional, for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and sauté for 3-4 minutes until translucent.
  2. Add garlic and grated carrot, cook for 2 more minutes until fragrant.
  3. Stir in tomato paste and cook for 1 minute to deepen the flavor.
  4. Add fire-roasted tomatoes (with juices), broth, balsamic vinegar, oregano, basil, red pepper flakes, and smoked paprika.
  5. Bring to a simmer, then reduce heat to low. Partially cover and let simmer for 30-40 minutes, stirring occasionally.
  6. For smoother sauce, use an immersion blender to partially puree (or leave chunky).
  7. Season with salt, pepper, and brown sugar (if using) to balance acidity.
  8. Serve over cooked pasta, garnished with fresh basil and Parmesan cheese.

  • For meat version: Brown 1 lb ground beef or Italian sausage before adding onions
