- 8 cups mixed salad greens (baby spinach, arugula, and butter lettuce)
- 1/2 cup dried cranberries
- 1/2 cup candied pecans
- 1/2 cup crumbled goat cheese or feta
- 1 crisp apple, thinly sliced
- 1/2 cup pomegranate arils
- 1/4 cup thinly sliced red onion
- For the Honey Mustard Dressing:
- 1/4 cup extra virgin olive oil
- 2 tbsp apple cider vinegar
- 2 tbsp honey
- 1 tbsp Dijon mustard
- 1 tsp whole grain mustard
- 1 small shallot, minced
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Make the dressing: In a small bowl, whisk together olive oil, vinegar, honey, both mustards, shallot, salt and pepper until emulsified.
- In a large salad bowl, combine mixed greens, apple slices, red onion, and half of the cranberries, pecans, and cheese.
- Drizzle with about half of the dressing and toss gently to coat.
- Top with remaining cranberries, pecans, cheese, and pomegranate arils.
- Serve immediately with extra dressing on the side.
Notes
- For a nut-free version, substitute roasted sunflower seeds
- Add grilled chicken or shrimp to make it a main course
- Dressing can be made 3 days ahead – store in refrigerator
- To prevent browning, toss apple slices with lemon juice before adding
