- 3/4 cup unsalted butter, softened

- 1/2 cup packed light brown sugar
- 1 large egg
- 1/2 cup eggnog (store-bought or homemade)
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt until well combined.
- In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
- Beat in the egg, eggnog, and vanilla extract until smooth.
- Gradually add the flour mixture to the wet ingredients, mixing until just combined.
- Scoop dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Optional: sprinkle lightly with nutmeg.
- Bake for 10-12 minutes until set around the edges and slightly underbaked in the center.
- Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Store cookies in an airtight container at room temperature for up to a week. Can be frozen for up to 3 months.
