Ingredients

  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg (plus more for sprinkling)
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1/2 cup eggnog (store-bought or homemade)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and salt until well combined.
  3. In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
  4. Beat in the egg, eggnog, and vanilla extract until smooth.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Scoop dough onto a parchment-lined baking sheet, spacing them about 2 inches apart. Optional: sprinkle lightly with nutmeg.
  7. Bake for 10-12 minutes until set around the edges and slightly underbaked in the center.
  8. Let cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
