Instructions
- Make the Vanilla Syrup: In a small saucepan over medium heat, combine 1/2 cup unsalted butter, 3/4 cup granulated sugar, and 1/2 cup water. Stir until the butter melts and sugar dissolves. Bring to a gentle simmer for 3 to 4 minutes. Remove from heat and stir in 2 tsp vanilla extract. Set aside to cool.
- Mix the Dry Ingredients: In a large mixing bowl, whisk together 1 1/2 cups flour, 2 tbsp sugar, 2 tsp baking powder, 1/4 tsp salt, and 1/2 tsp ground nutmeg until fully combined.
- Mix the Wet Ingredients: In a separate bowl, whisk together 1 cup eggnog, 1/4 cup milk, 1 large egg, 2 tbsp melted butter, and 1 tsp vanilla extract until smooth.
- Combine Wet and Dry: Pour the wet ingredients into the dry. Stir gently until just combined.
- Rest the Batter: Let the batter sit for 5 minutes.
- Cook the Pancakes: Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/4 cup batter for each pancake. Cook for 2 to 3 minutes until bubbles form on the surface; flip and cook for another 2 minutes until golden brown.
- Serve Warm: Stack pancakes, pour vanilla syrup over the top, add a pat of butter, and dust with nutmeg.
