- 1 cup mini marshmallows

- 1 (8 oz) container frozen whipped topping (Cool Whip), thawed
- 1 cup shredded sweetened coconut (optional)
- Maraschino cherries for garnish (optional)
Instructions
- In a large mixing bowl, whisk together the pistachio pudding mix and crushed pineapple (with juice) until well combined.
- Fold in the whipped topping until smooth and evenly mixed.
- Gently stir in the mini marshmallows, nuts (if using), and coconut (if using).
- Cover and refrigerate for at least 2 hours, or overnight, to allow flavors to blend.
- Before serving, give it a gentle stir and garnish with maraschino cherries if desired.
- Serve chilled and enjoy!
Notes
- For a lighter version, use sugar-free pudding mix and light whipped topping.
- If the salad is too thick, add a tablespoon of pineapple juice or milk to loosen it.
