Dumpling (Pelmeni) Soup

  • Author: chef caterina

  • Yield: 6 servings 1x

Description

A comforting Russian soup featuring tender pelmeni (meat-filled dumplings) in a clear, aromatic broth with fresh herbs. Hearty yet light, this is the ultimate cold-weather comfort food.

Ingredients

Scale
  • 2 tbsp olive oil (for sautéing)
  • 2 medium carrots, diced very finely (for a subtle sweetness)
  • 1/2 large onion, finely chopped (for depth of flavor)
  • 1 cup frozen corn (optional, for added sweetness and texture)
  • 3 qt chicken broth (homemade or low-sodium store-bought)
  • 1 lb pelmeni (store-bought or homemade; I love using [Brand Name] for a fantastic texture)
  • 1/2 cup green onion, chopped (for garnish and freshness)
  • 3 tbsp fresh parsley, diced (to enhance visual appeal and freshness)

Instructions

1. Preparation

  • First, dice your onion and carrots into very tiny pieces; this will ensure they cook evenly and quickly, blending seamlessly into the broth.

2. Sauté the Vegetables

  • In a large pot, preheat the olive oil over medium heat. Add the onions and carrots, sautéing them for about 5-7 minutes until they’re golden brown and aromatic. You’ll know they’re ready when they soften and the sweetness of the onions fills your kitchen—ah, bliss!

3. Create the Broth

  • Once your veggies are perfectly caramelized, add the corn and chicken broth to the pot. Stir everything together and bring the mixture to a boil. The sound of bubbling broth is like music to my ears!

4. Add the Dumplings

  • Gently place the pelmeni into the boiling broth. Lower the heat and cook for about 15-20 minutes. As they cook, you’ll notice all the dumplings will float to the top—an indicator that they’re perfectly done (and visually stunning!)

5. Final Touches

  • Add the chopped green onions and fresh parsley to the soup. Please give it a quick stir, and voila! Your Dumpling (Pelmeni) Soup is ready to be dished up. Serve it hot and watch as everyone gathers around, eager for a taste.

Notes

Homemade pelmeni taste best but frozen work well for quick meal,For richer broth, use combination of beef and chicken stock,Add a pat of butter to each bowl for extra richness,Leftovers can be refrigerated for 2 days (broth will thicken)
