Description

A delightful twist on classic donuts, these muffins are soft, fluffy, and infused with cinnamon flavors, topped with a delicious cinnamon-sugar finish.


Ingredients

  • ½ cup applesauce (unsweetened)
  • ½ cup milk (whole or low-fat)
  • ¼ cup unsalted butter (melted and cooled)
  • 1 egg (lightly beaten)
  • 1 teaspoon vanilla extract
  • 1½ cups all-purpose flour
  • ⅓ cup granulated sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup sugar (for topping)
  • ½ teaspoon cinnamon (for topping)
  • 2 tablespoons unsalted butter (melted and cooled, for dipping)

Instructions

  1. Preheat your oven to 375°F and grease a 24-cup mini muffin pan with nonstick spray.
  2. In a medium bowl, mix together the applesauce, milk, melted butter, beaten egg, and vanilla extract.
  3. Add flour, sugar, cinnamon, baking powder, baking soda, and salt to the wet ingredients and mix until just combined.
  4. Fill each muffin cup about ¾ full with batter using 1½ tablespoons of batter.
  5. Bake for 10-12 minutes until puffed and golden brown.
  6. Once baked, cool them for a minute, then transfer to a wire rack to cool completely.
  7. Mix sugar and cinnamon for the topping and dip muffin tops in melted butter and then in the cinnamon-sugar mixture.

Notes

For variations, add chocolate chips or dried fruit. Store in an airtight container for 3-4 days or freeze for up to 3 months.
