A delightful twist on classic donuts, these muffins are soft, fluffy, and infused with cinnamon flavors, topped with a delicious cinnamon-sugar finish.

- ½ cup applesauce (unsweetened)
- ½ cup milk (whole or low-fat)
- ¼ cup unsalted butter (melted and cooled)
- 1 egg (lightly beaten)
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- ⅓ cup granulated sugar
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ¼ cup sugar (for topping)
- ½ teaspoon cinnamon (for topping)
- 2 tablespoons unsalted butter (melted and cooled, for dipping)
Instructions
- Preheat your oven to 375°F and grease a 24-cup mini muffin pan with nonstick spray.
- In a medium bowl, mix together the applesauce, milk, melted butter, beaten egg, and vanilla extract.
- Add flour, sugar, cinnamon, baking powder, baking soda, and salt to the wet ingredients and mix until just combined.
- Fill each muffin cup about ¾ full with batter using 1½ tablespoons of batter.
- Bake for 10-12 minutes until puffed and golden brown.
- Once baked, cool them for a minute, then transfer to a wire rack to cool completely.
- Mix sugar and cinnamon for the topping and dip muffin tops in melted butter and then in the cinnamon-sugar mixture.
Notes
For variations, add chocolate chips or dried fruit. Store in an airtight container for 3-4 days or freeze for up to 3 months.
