  • Author: chef caterina
  • Total Time: 4 hours 45 mins (includes chilling)
  • Yield: 10 servings 1x
  • Diet: Vegetarian

Description

An elegant, ultra-rich dark chocolate tart with a buttery cookie crust, silky ganache filling, and luxurious toppings of dulce de leche and sea salt flakes. This sophisticated dessert balances deep chocolate intensity with subtle sweetness and texture contrasts.

Ingredients

Scale
  • For the Crust:
  • 1.5 cups cookie crumbs (sugar cookies/graham crackers/digestive biscuits)
  • 6 tbsp unsalted butter, melted (Plugra recommended)
  • ¼ cup granulated sugar
  • For the Ganache:
  • 12 oz dark chocolate, finely chopped (Ghirardelli or Valrhona)
  • 8.5 oz heavy whipping cream (high-fat)
  • 4 tbsp unsalted butter, room temperature
  • Toppings:
  • Maldon sea salt flakes
  • Dulce de leche (for drizzling)

Instructions

  1. Make Crust: Combine crumbs, melted butter and sugar. Press firmly into 9-inch tart pan with removable bottom. Freeze 15 minutes.
  2. Preheat oven to 350°F (175°C). Bake crust 12-15 minutes until golden. Cool completely.
  3. Make Ganache: Place chopped chocolate in heatproof bowl. Heat cream until just boiling, then pour over chocolate. Let sit 2 minutes.
  4. Gently whisk chocolate-cream mixture until smooth. Add butter pieces one at a time, whisking until fully incorporated.
  5. Pour ganache into cooled crust. Tap gently to remove air bubbles. Refrigerate 4 hours (or overnight) until set.
  6. Before serving: Drizzle with dulce de leche and sprinkle with sea salt flakes. Use warm knife for clean slices.

Notes

  • For professional finish: Use piping bag for dulce de leche decoration
  • Chocolate tip: 70% cacao works best for balanced flavor
  • Serving suggestion: Pair with raspberry coulis or vanilla bean ice cream
  • Make ahead: Ganache sets best with overnight chilling
  • Storage: Keeps refrigerated for 5 days (bring to room temp before serving)
