A delightful blend of traditional lasagna flavors in a cozy, easy-to-make soup form, perfect for any family gathering.


Ingredients

  • 1 pound ground beef or Italian sausage
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups beef broth
  • 2 cups water
  • 2 teaspoons Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • Fresh basil or parsley for garnish

Instructions

  1. In a skillet over medium heat, brown the ground beef or Italian sausage with the chopped onion and minced garlic for 5-7 minutes. Drain excess fat.
  2. In your slow cooker, combine the cooked meat mixture with crushed tomatoes, beef broth, water, Italian seasoning, salt, and pepper.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. About 30 minutes before serving, stir in the broken lasagna noodles.
  5. Once the noodles are al dente, stir in the ricotta, mozzarella, and Parmesan cheese until melted.
  6. Serve hot, garnished with fresh basil or parsley.

Notes

Store any leftovers in an airtight container in the fridge for up to 4 days. You can also freeze it for up to 3 months.
