Description

Fresh and vibrant spring rolls filled with crisp vegetables, herbs, and protein, wrapped in delicate rice paper for a light and healthy appetizer or snack.


Ingredients

  • Rice paper wrappers
  • Lettuce (romaine or butter lettuce)
  • Carrots, shredded or julienned
  • Cucumbers, thinly sliced
  • Cooked shrimp, sliced
  • Grilled chicken, shredded
  • Baked tofu, marinated
  • Fresh mint leaves
  • Fresh cilantro, chopped
  • Peanut sauce for dipping
  • Hoisin sauce for dipping

Instructions

  1. Prepare all fillings by slicing vegetables and proteins into thin strips
  2. Soak rice paper wrapper in warm water for 10 seconds until pliable
  3. Place hydrated wrapper on clean surface
  4. Layer lettuce, vegetables, protein, and herbs in center of wrapper
  5. Fold sides over filling, then roll tightly from bottom to top
  6. Repeat with remaining wrappers and fillings
  7. Serve immediately with dipping sauces

Notes

  • Don’t over-soak rice paper to prevent tearing
  • Use fresh ingredients for best flavor and texture
  • Store rolls in airtight container with damp paper towels
