Description

A velvety smooth tomato soup enriched with cream and fresh basil, offering a perfect balance of tangy and sweet flavors. This comforting classic pairs beautifully with grilled cheese or crusty bread.


Ingredients

  • 1/3 cup olive oil
  • 2 large carrots (chopped)
  • 1 large onion (chopped)
  • 28 oz canned Italian-style tomatoes
  • 1 qt chicken broth
  • 1 cup fresh basil
  • 1 cup heavy cream.
  • 1/2 tbsp salt (adjust to taste)
  • 1 tsp pepper (adjust to taste)

Instructions

Heat olive oil in large pot over medium heat. Sauté onion until translucent (5 min). Add garlic; cook 1 minute until fragrant.,Add tomatoes with their juices, stock, basil, sugar, salt and pepper. Bring to boil, then reduce heat and simmer uncovered for 25 minutes.,Remove from heat. Using immersion blender, puree soup until smooth (or blend in batches in regular blender).,Return to low heat. Stir in cream, butter and red pepper flakes. Heat through but don’t boil.,Adjust seasoning. Serve hot garnished with fresh basil, olive oil drizzle and Parmesan if desired.

Notes

For dairy-free version, substitute coconut milk for cream,Roast canned tomatoes at 400°F for 20 min beforehand for deeper flavor,Freezes well (without cream) for up to 3 months,Add 1/4 cup vodka during simmering for creamy tomato vodka soup variation
