Layers of tender potatoes baked in a rich, creamy sauce with a golden cheese crust – the ultimate comfort food side dish.

- 2 lbs russet or Yukon gold potatoes, peeled and thinly sliced
- 2 tbsp unsalted butter
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 2 cups whole milk
- 1 cup heavy cream
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp ground nutmeg (optional)
- 1 tbsp chopped fresh parsley (for garnish, optional)
Instructions
- Preheat oven to 375°F (190°C). Butter a 9×13-inch baking dish.
- Melt butter in saucepan over medium heat. Whisk in flour and cook 1 minute.
- Gradually whisk in milk and cream until smooth. Bring to simmer.
- Add salt, pepper, garlic powder and nutmeg. Cook 3-4 minutes until thickened.
- Remove from heat and stir in 1 cup cheddar cheese until melted.
- Layer half the potatoes in baking dish, pour half the sauce over.
- Repeat with remaining potatoes and sauce. Sprinkle with remaining cheeses.
- Cover with foil and bake 45 minutes. Uncover and bake 30 more minutes until golden.
- Let rest 15 minutes before serving. Garnish with thyme.
Notes
- For crispier top, broil last 2-3 minutes (watch carefully)
- Can assemble 1 day ahead – refrigerate covered, add 10 minutes baking time
- Add cooked bacon or ham between layers for heartier version
- Use mandoline for even potato slices
