Description

Layers of tender potatoes baked in a rich, creamy sauce with a golden cheese crust – the ultimate comfort food side dish.


Ingredients

  • 2 lbs russet or Yukon gold potatoes, peeled and thinly sliced
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp ground nutmeg (optional)
  • 1 tbsp chopped fresh parsley (for garnish, optional)


Instructions

  1. Preheat oven to 375°F (190°C). Butter a 9×13-inch baking dish.
  2. Melt butter in saucepan over medium heat. Whisk in flour and cook 1 minute.
  3. Gradually whisk in milk and cream until smooth. Bring to simmer.
  4. Add salt, pepper, garlic powder and nutmeg. Cook 3-4 minutes until thickened.
  5. Remove from heat and stir in 1 cup cheddar cheese until melted.
  6. Layer half the potatoes in baking dish, pour half the sauce over.
  7. Repeat with remaining potatoes and sauce. Sprinkle with remaining cheeses.
  8. Cover with foil and bake 45 minutes. Uncover and bake 30 more minutes until golden.
  9. Let rest 15 minutes before serving. Garnish with thyme.

Notes

  • For crispier top, broil last 2-3 minutes (watch carefully)
  • Can assemble 1 day ahead – refrigerate covered, add 10 minutes baking time
  • Add cooked bacon or ham between layers for heartier version
  • Use mandoline for even potato slices
