Creamy Instant Pot Chicken with Mushrooms

Description

Tender chicken breasts smothered in a luxurious creamy mushroom sauce, cooked to perfection in the Instant Pot for a fuss-free, restaurant-quality meal that’s ready in under 30 minutes.


Ingredients

  • 1/3 cup flour
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • 3 tbsp olive oil
  • 2 lb chicken breast
  • 1 lb mushrooms (sliced)
  • 1/3 cup water
  • 1/2 cup heavy cream

Instructions

  1. Season chicken breasts with salt, pepper, garlic powder, and paprika.
  2. Set Instant Pot to Sauté mode. Add oil and brown chicken for 3 minutes per side. Remove and set aside.
  3. Add mushrooms, garlic, and onion to pot. Sauté for 3 minutes until softened.
  4. Pour in chicken broth, scraping bottom to deglaze. Stir in Dijon and thyme.
  5. Return chicken to pot. Secure lid and set to High Pressure for 8 minutes.
  6. Quick release pressure. Remove chicken and tent with foil.
  7. Set to Sauté mode. Stir in cream and Parmesan, simmering for 2 minutes until thickened.
  8. Return chicken to pot, spooning sauce over top. Garnish with parsley before serving.

Notes

  • For extra flavor, use a mix of wild mushrooms
  • Substitute half-and-half for lighter version (sauce will be thinner)
  • Serve over mashed potatoes, pasta, or rice
  • Natural release for 5 minutes if using frozen chicken
