Description
Tender chicken breasts smothered in a luxurious creamy mushroom sauce, cooked to perfection in the Instant Pot for a fuss-free, restaurant-quality meal that’s ready in under 30 minutes.
Ingredients
- 1/3 cup flour
- 1 tbsp salt
- 1 tsp black pepper
- 1 tsp Italian seasoning
- 3 tbsp olive oil
- 2 lb chicken breast
- 1 lb mushrooms (sliced)
- 1/3 cup water
- 1/2 cup heavy cream
Instructions
- Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Set Instant Pot to Sauté mode. Add oil and brown chicken for 3 minutes per side. Remove and set aside.
- Add mushrooms, garlic, and onion to pot. Sauté for 3 minutes until softened.
- Pour in chicken broth, scraping bottom to deglaze. Stir in Dijon and thyme.
- Return chicken to pot. Secure lid and set to High Pressure for 8 minutes.
- Quick release pressure. Remove chicken and tent with foil.
- Set to Sauté mode. Stir in cream and Parmesan, simmering for 2 minutes until thickened.
- Return chicken to pot, spooning sauce over top. Garnish with parsley before serving.
Notes
- For extra flavor, use a mix of wild mushrooms
- Substitute half-and-half for lighter version (sauce will be thinner)
- Serve over mashed potatoes, pasta, or rice
- Natural release for 5 minutes if using frozen chicken
