- 1 ¾ cups all-purpose flour
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ¾ cup canned pumpkin puree
- ½ cup vegetable oil
- 2 large eggs
- ¼ cup milk
- 1 teaspoon vanilla extract
- 3 tablespoons granulated sugar (for topping)
- 1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
- Whisk together flour, both sugars, baking soda, baking powder, salt, and spices.
- In separate bowl, mix pumpkin puree, oil, eggs, milk, and vanilla until smooth.
- Combine wet and dry ingredients, stirring just until mixed.
- Pour batter into prepared pan.
- Mix 3 tablespoons sugar with 1 teaspoon cinnamon and sprinkle over batter.
- Bake 55-65 minutes until toothpick comes out clean.
- Cool in pan 10 minutes, then transfer to wire rack to cool completely.
Notes
- Do not overmix batter to maintain tender texture
- Can add chocolate chips or nuts if desired
- Store in airtight container at room temperature for 4 days
- Freezes well for up to 3 months
