Description

Ingredients

  • 1 ½ cups (355ml) water
  • 1 cup (200g) granulated sugar
  • ¾ cup (75g) unsweetened cocoa powder (Dutch-process preferred)
  • ¼ tsp salt
  • 6 oz (170g) bittersweet or semisweet chocolate (chopped, at least 70% cacao)
  • 1 tsp pure vanilla extract
  • Optional: 1 tbsp coffee liqueur or espresso powder (enhances chocolate flavor)

Instructions

  1. In a saucepan, whisk water, sugar, cocoa powder, and salt until smooth. Bring to a boil over medium heat, stirring constantly.
  2. Reduce heat and simmer for 1 minute, then remove from heat.
  3. Add chopped chocolate and vanilla, stirring until completely melted and smooth.
  4. Optional: Stir in coffee liqueur or espresso powder if using.
  5. Let cool to room temperature, then refrigerate until completely chilled (at least 4 hours or overnight).
  6. Churn in ice cream maker according to manufacturer’s instructions (about 20-25 minutes).
  7. Transfer to an airtight container and freeze until firm (about 4 hours).

Notes

  • For scoopable texture, let sorbet sit at room temperature 5 minutes before serving.
  • Without an ice cream maker? Freeze mixture in shallow pan, scraping with fork every 30 minutes until slushy.
  • Higher cocoa percentage chocolate yields deeper flavor.
  • Store up to 2 weeks covered with parchment paper pressed directly on surface.
