Luxuriously smooth and intensely chocolatey sorbet made without dairy. A vegan-friendly frozen treat that satisfies chocolate cravings with minimal ingredients.
Ingredients

- 1 ½ cups (355ml) water
- 1 cup (200g) granulated sugar
- ¾ cup (75g) unsweetened cocoa powder (Dutch-process preferred)
- ¼ tsp salt
- 6 oz (170g) bittersweet or semisweet chocolate (chopped, at least 70% cacao)
- 1 tsp pure vanilla extract
- Optional: 1 tbsp coffee liqueur or espresso powder (enhances chocolate flavor)
Instructions
- In a saucepan, whisk water, sugar, cocoa powder, and salt until smooth. Bring to a boil over medium heat, stirring constantly.
- Reduce heat and simmer for 1 minute, then remove from heat.
- Add chopped chocolate and vanilla, stirring until completely melted and smooth.
- Optional: Stir in coffee liqueur or espresso powder if using.
- Let cool to room temperature, then refrigerate until completely chilled (at least 4 hours or overnight).
- Churn in ice cream maker according to manufacturer’s instructions (about 20-25 minutes).
- Transfer to an airtight container and freeze until firm (about 4 hours).
Notes
- For scoopable texture, let sorbet sit at room temperature 5 minutes before serving.
- Without an ice cream maker? Freeze mixture in shallow pan, scraping with fork every 30 minutes until slushy.
- Higher cocoa percentage chocolate yields deeper flavor.
- Store up to 2 weeks covered with parchment paper pressed directly on surface.
