  • 1/2 cup heavy cream
  • 1/4 cup light corn syrup
  • 1 teaspoon sea salt
  • 2 cups semi-sweet or milk chocolate chips
  • 1 tablespoon coconut oil or vegetable oil
  • 1/4 cup chocolate chips (optional for drizzle)
  • 1 teaspoon coconut oil (melted, optional for drizzle)

Instructions

  1. Prepare Your Metal Shapes: Place metal cookie cutters or dessert molds on a parchment-lined baking sheet and lightly grease them.
  2. Make the Rice Krispie Layer: Melt the butter in a large pot over low heat. Add mini marshmallows and stir until fully melted. Remove from heat and mix in vanilla extract, then fold in crispy rice cereal and press into molds. Let set for about 10 minutes.
  3. Prepare the Caramel Layer: In a saucepan, combine sugar, butter, heavy cream, and corn syrup. Heat while stirring until smooth, then cook until the caramel thickens and turns amber. Stir in sea salt, cool slightly, and spoon over the Rice Krispie layer. Let it set at room temperature or refrigerate for 15-20 minutes.
  4. Add the Chocolate Layer: Melt chocolate chips with coconut oil in intervals, then pour over the caramel layer. Chill until fully set, about 20-30 minutes.
  5. Release and Decorate: Gently press treats out of the molds and drizzle with melted chocolate if desired. Let set before serving.
