- 4 Salmon fillets
- 2 tbsp Chipotle powder
- 2 tbsp Lime juice
- 8 Taco shells (soft corn or flour)
- 1 cup Fresh corn
- 1 Avocado, diced
- 1 Peach, diced
- 1/4 cup Cilantro, chopped
- 1 cup Plain yogurt
- 1 tsp Garlic powder
- Salt to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, combine chipotle powder, lime juice, and a pinch of salt. Rub this mixture onto the salmon fillets and let marinate for 10-15 minutes.
- Place the salmon on a parchment-lined baking sheet and bake for about 15-20 minutes, until cooked through and flaky.
- While the salmon bakes, in a medium bowl, combine fresh corn, diced avocado, and diced peach. Squeeze lime juice over the top.
- In another bowl, mix the yogurt with chopped cilantro, garlic powder, lime juice, and salt.
- Assemble the tacos by layering the salmon, topped with corn, avocado, peach salsa, and drizzle with yogurt sauce.
- Serve immediately, garnished with lime wedges and cilantro.
Notes
Use fresh salmon for the best taste and don’t overcook it. Store any leftovers separately to maintain freshness.
