  • 1 packet (1 oz) taco seasoning (or homemade blend)
  • 1/4 cup water
  • 4 large flour tortillas (burrito-size)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes (or pico de gallo)
  • 1/4 cup finely diced white onion
  • 1/4 cup sliced pickled jalapeños (optional)
  • 2 tbsp sour cream (for serving)
  • 1 tbsp vegetable oil (for cooking)

Instructions

  1. Cook the beef: Brown ground beef in a skillet over medium heat, breaking it into crumbles. Drain excess fat.
  2. Season: Add taco seasoning and water. Simmer for 3–5 minutes until thickened. Remove from heat.
  3. Assemble: On half of each tortilla, layer beef, cheeses, tomatoes, onion, and jalapeños (if using). Fold tortillas in half.
  4. Grill: Heat oil in a skillet over medium. Cook each Meximelt for 2–3 minutes per side until golden and cheese melts.
  5. Serve: Cut into wedges and serve with sour cream or salsa. Enjoy immediately!
