- 1 lb ground beef (80/20 lean/fat)
- 1 packet (1 oz) taco seasoning (or homemade blend)
- 1/4 cup water
- 4 large flour tortillas (burrito-size)
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced tomatoes (or pico de gallo)
- 1/4 cup finely diced white onion
- 1/4 cup sliced pickled jalapeños (optional)
- 2 tbsp sour cream (for serving)
- 1 tbsp vegetable oil (for cooking)
Instructions
- Cook the beef: Brown ground beef in a skillet over medium heat, breaking it into crumbles. Drain excess fat.
- Season: Add taco seasoning and water. Simmer for 3–5 minutes until thickened. Remove from heat.
- Assemble: On half of each tortilla, layer beef, cheeses, tomatoes, onion, and jalapeños (if using). Fold tortillas in half.
- Grill: Heat oil in a skillet over medium. Cook each Meximelt for 2–3 minutes per side until golden and cheese melts.
- Serve: Cut into wedges and serve with sour cream or salsa. Enjoy immediately!
Notes
- For extra crispiness, butter the tortillas instead of using oil.
- Substitute ground turkey or chicken for a lighter version.
- Add refried beans or Spanish rice for a heartier filling.
