Instructions

  1. Clean mushrooms and pat dry. If large, cut into halves or quarters.
  2. Place mushrooms in a bowl with buttermilk, ensuring they are fully coated. Marinate for at least 30 minutes in the refrigerator.
  3. In a separate bowl, whisk together flour, cornstarch, baking powder, paprika, garlic powder, onion powder, cayenne (if using), salt, and black pepper.
  4. Remove mushrooms from buttermilk, allowing excess to drip off. Toss in flour mixture until evenly coated.
  5. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
  6. Fry mushrooms in batches for 3-4 minutes until golden brown and crispy. Avoid overcrowding the pan.
  7. Remove with a slotted spoon and drain on paper towels. Sprinkle with additional salt while hot.
