- 8 cups seedless watermelon, cubed or balled
- 8 oz burrata cheese (2 small or 1 large)
- 4 cups baby arugula
- 1/4 cup fresh mint leaves, torn
- 1/4 cup fresh basil leaves, torn
- 1/2 cup thinly sliced red onion
- 1/3 cup toasted pistachios, roughly chopped
- 2 tbsp extra virgin olive oil
- 2 tbsp aged balsamic vinegar
- 2 tbsp balsamic glaze
- 1/2 tsp flaky sea salt
- 1/4 tsp freshly ground black pepper

Instructions
- Arrange arugula on large platter or individual plates.
- Distribute watermelon cubes evenly over arugula.
- Tear burrata into pieces and scatter over watermelon.
- Top with red onion slices, mint, basil, and pistachios.
- Drizzle with olive oil and balsamic vinegar.
- Finish with balsamic glaze, sea salt, and black pepper.
- Serve immediately, allowing guests to break open the burrata.
