Jumbo flour tortillas stuffed with seasoned ground beef, rice, beans, and melted cheese, then grilled to perfection. Perfect for meal prep or feeding a crowd!

- 1 lb (450g) ground beef (80/20 lean/fat)
- 1 packet (1 oz) taco seasoning (or homemade blend)
- 1/2 cup water
- 1 cup cooked white or brown rice
- 1 (15 oz) can refried beans (or black beans)
- 4 large flour tortillas (10–12 inch)
- 1 1/2 cups shredded Mexican cheese blend
- 1/2 cup diced onions
- 1/2 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1 avocado, sliced (optional)
- 1 tbsp vegetable oil (for grilling)
- Sour cream, salsa, and hot sauce for serving
Instructions
- Cook beef: Brown ground beef in skillet over medium-high heat. Drain fat, then add taco seasoning and water. Simmer 5 mins until thickened.
- Warm beans: In separate pan, heat refried beans with 2 tbsp water until spreadable.
- Assemble: Lay tortillas flat. Spread beans in center, then layer rice, beef, cheese, onions, tomatoes, cilantro, and avocado (if using).
- Fold: Fold sides inward, then roll tightly from the bottom.
- Grill: Heat oil in skillet over medium. Place burritos seam-side down, cook 2-3 mins per side until golden and cheese melts.
- Serve: Cut in half diagonally. Serve with sour cream, salsa, and hot sauce.
Notes
- Freezer tip: Wrap unbaked burritos in foil, freeze for up to 3 months (reheat at 375°F for 25 mins).
- For crispier shells: Brush with oil and air fry at 400°F for 5 mins.
- Substitute ground turkey or plant-based crumbles for lighter options.
