Ingredients

  • 1 lb ground beef
  • 12 oz rotini pasta
  • 1 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup low-sodium beef broth
  • 1 tbsp flour (optional, for thickening)
  • Salt and freshly ground black pepper, to taste
  • 1 tsp Italian seasoning (optional)
  • Fresh chopped parsley, for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Once boiling, add the rotini pasta and cook until al dente (about 8-10 minutes). Drain and reserve 1/2 cup of the pasta water.
  2. In a large skillet, over medium-high heat, add the ground beef. Cook until browned (about 5-7 minutes). Season with salt and pepper, then remove from skillet and set aside.
  3. In the same skillet, add olive oil and heat until shimmering. Add the minced garlic, stirring for about 1 minute until fragrant.
  4. Pour in the low-sodium beef broth and bring it to a gentle simmer. Next, stir in the heavy cream and grated Parmesan cheese, whisking until smooth and the cheese has melted.
  5. If you desire a thicker sauce, sprinkle in the flour and stir continuously for another minute.
  6. Return the cooked beef to the skillet, followed by the drained rotini. Stir well to coat, adding reserved pasta water as needed to reach your desired consistency.
  7. Stir in Italian seasoning if using and adjust salt and pepper to taste. Serve hot, garnished with fresh chopped parsley.

Notes

Let the heavy cream sit at room temperature for a few minutes before using to ensure it blends smoothly. Store leftovers in an airtight container in the fridge for up to 3 days.
