    • For the marinade:
    • 2 tbsp soy sauce
    • 1 tbsp cornstarch
    • 1 tbsp rice wine
    • 1 tsp sesame oil

 

  • For the sauce:
  • 1/4 cup beef broth
  • 3 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp cornstarch
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. Marinate beef: Combine beef with marinade ingredients. Let sit 15 minutes while preparing other ingredients.
  2. Cook noodles: Boil ramen noodles 2 minutes (al dente). Drain, rinse with cold water, and toss with 1 tsp oil to prevent sticking.
  3. Blanch broccoli: Boil broccoli 1 minute, then shock in ice water. Drain well.
  4. Make sauce: Whisk together all sauce ingredients in a small bowl.
  5. Stir-fry beef: Heat 1 tbsp oil in wok over high heat. Add beef in single layer and sear 1 minute per side. Remove.
  6. Cook aromatics: Add remaining oil. Stir-fry garlic, ginger, and white parts of green onions 30 seconds until fragrant.
  7. Combine: Add broccoli and sauce. Cook 1 minute until thickened. Return beef and add noodles. Toss everything together 1-2 minutes until heated through.
  8. Serve: Garnish with green onions and sesame seeds. Serve immediately.
