Ingredients

  • 1 lb ground beef (85/15 lean)
  • 1 packet (1 oz) taco seasoning
  • 1/2 cup water
  • 1 can (16 oz) refried beans
  • 1 cup cooked Spanish rice
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 6 large flour tortillas (10-inch)
  • 1 tbsp vegetable oil (for brushing)
  • Optional toppings: guacamole, salsa, hot sauce

Instructions

  1. Cook beef: Brown ground beef in skillet over medium heat. Drain excess fat.
  2. Season beef: Add taco seasoning and water. Simmer 5 minutes until thickened.
  3. Warm beans: In separate pan, heat refried beans with 2 tbsp water until spreadable.
  4. Assemble: Lay out tortillas. Spread beans down center, then layer rice, beef, cheeses, tomatoes, cilantro and sour cream.
  5. Fold burritos: Fold sides inward, then roll tightly from bottom. Brush with oil.
  6. Cook: Heat skillet over medium. Cook burritos seam-side down 2-3 minutes per side until golden.
  7. Serve: Cut in half and serve with desired toppings.

Notes

  • For crispier burritos, bake at 400°F for 10 minutes after pan-frying
  • Freeze unbaked burritos wrapped in foil for up to 3 months
  • Substitute black beans for refried beans for healthier option
