- 8 oz (225g) fettuccine or linguine pasta
- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1 large egg, beaten
- 1/2 cup breadcrumbs (panko for extra crispiness)
- 1/4 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup freshly grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cook the pasta: Boil pasta in salted water according to package instructions. Drain and set aside.
- Prepare the chicken: Pound chicken breasts to even thickness. Season with salt and pepper.
- Bread the chicken: Dredge chicken in flour, dip in beaten egg, then coat in a mixture of breadcrumbs, Parmesan, garlic powder, and Italian seasoning.
- Cook the chicken: Heat olive oil in a pan over medium heat. Cook chicken for 4-5 minutes per side until golden and crispy. Remove and let rest before slicing.
- Make the sauce: In the same pan, melt butter and sauté garlic until fragrant. Add heavy cream, chicken broth, and Parmesan, stirring until smooth and slightly thickened.
- Combine: Toss cooked pasta in the sauce. Add chopped basil and red pepper flakes (if using).
- Serve: Slice chicken and place on top of pasta. Garnish with extra Parmesan and fresh basil.
Notes
- For extra crispy chicken, use panko breadcrumbs.
- Substitute half-and-half for heavy cream for a lighter version.
- Add sun-dried tomatoes or spinach for extra flavor and nutrients.
- Leftovers can be stored in the fridge for up to 3 days.
