  • 2 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 large egg, beaten
  • 1/2 cup breadcrumbs (panko for extra crispiness)
  • 1/4 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook the pasta: Boil pasta in salted water according to package instructions. Drain and set aside.
  2. Prepare the chicken: Pound chicken breasts to even thickness. Season with salt and pepper.
  3. Bread the chicken: Dredge chicken in flour, dip in beaten egg, then coat in a mixture of breadcrumbs, Parmesan, garlic powder, and Italian seasoning.
  4. Cook the chicken: Heat olive oil in a pan over medium heat. Cook chicken for 4-5 minutes per side until golden and crispy. Remove and let rest before slicing.
  5. Make the sauce: In the same pan, melt butter and sauté garlic until fragrant. Add heavy cream, chicken broth, and Parmesan, stirring until smooth and slightly thickened.
  6. Combine: Toss cooked pasta in the sauce. Add chopped basil and red pepper flakes (if using).
  7. Serve: Slice chicken and place on top of pasta. Garnish with extra Parmesan and fresh basil.

Notes

  • For extra crispy chicken, use panko breadcrumbs.
  • Substitute half-and-half for heavy cream for a lighter version.
  • Add sun-dried tomatoes or spinach for extra flavor and nutrients.
