Instructions
- Preheat oven to 425°F (220°C). Line 12-cup muffin pan.
- Whisk together dry ingredients: flour, sugars, baking soda, salt, and spices.
- In separate bowl, mix eggs, mashed bananas, applesauce, oil, and vanilla.
- Combine wet and dry ingredients, mixing until just combined.
- Fold in grated apple.
- Divide batter among muffin cups, filling 3/4 full.
- Make topping: mix brown sugar, flour, melted butter, and cinnamon until crumbly.
- Sprinkle topping over muffins.
- Bake at 425°F for 5 minutes, then reduce to 350°F (175°C) and bake 16-18 minutes until toothpick comes out clean.
- Cool in pan 5 minutes, then transfer to wire rack.
Notes
- Do not overmix batter – mix until just combined for tender muffins.
- Use very ripe bananas for maximum sweetness and moisture.
- Store in airtight container at room temperature for 3 days or freeze for up to 2 months.
- For healthier version, substitute half the oil with additional applesauce.
