Instructions

  1. Preheat oven to 425°F (220°C). Line 12-cup muffin pan.
  2. Whisk together dry ingredients: flour, sugars, baking soda, salt, and spices.
  3. In separate bowl, mix eggs, mashed bananas, applesauce, oil, and vanilla.
  4. Combine wet and dry ingredients, mixing until just combined.
  5. Fold in grated apple.
  6. Divide batter among muffin cups, filling 3/4 full.
  7. Make topping: mix brown sugar, flour, melted butter, and cinnamon until crumbly.
  8. Sprinkle topping over muffins.
  9. Bake at 425°F for 5 minutes, then reduce to 350°F (175°C) and bake 16-18 minutes until toothpick comes out clean.
  10. Cool in pan 5 minutes, then transfer to wire rack.
